Stuffed Mushrooms 
This is a go-to appetizer that is veggie based, but both vegetarian and meat-eaters alike will adore them. The stuffing is made with chickpeas and walnuts, creating a hearty, protein-packed filling. Quick tip, to make the recipe vegan, use a vegan cheese in place of the parmesan cheese.
